This is an
absolutely delicious dish that has savoury wafting up from every direction. It's a recipe that I always asked for since I was a kid for my birthday dinner, and today being that day, I figure it's appropriate to share it with you!

It's a great combination of all kinds of textures and complimentary flavours. The pieces of rice, juicy chicken, smooth avocado and lemony hollandaise sauce make this meal an adventure for your taste buds.
Plus, it's
very easy to make!
What You'll Need - Items:
Frying Pan
Saucepan
Whisk

Wooden Spoon
Little Spoon - for tasting the sauce!
What You'll Need - Ingredients (2 servings):
2 Cups of Rice, white or brown is fine
2 Chicken Breasts, thawed

1 Avocado
For Hollandaise Sauce
1 Egg
1/4 Cup of Butter
1 Lemon
Sprinkle of Salt
Let's Get Cooking!
1. Start to cook the rice and the chicken as you normally would. My preference is cooking instant rice to save time and grilling the chicken in a frying pan.
2. Juice lemon, put aside. Cut avocado in half, take out pit. Peel avocado with your fingers, to not waste any of the deliciousness inside. Cut into slices.
3. Melt the butter in a small saucepan.When butter is just boiled, crack in an egg and whisk like mad. Turn down heat.
4. Pour in about a tablespoon of lemon juice into the sauce. Continue stirring. Taste. It should be a little bit sour, but still savoury.
5. To prepare plates, start with a mound of rice. Top with around 6 slices of chicken, followed by avocado slices (probably one half of an avocado for each plate).
6. Drizzle hollandaise sauce over avocados and
voila!
