
This recipe was inspired from a visit to Hungary in Summer 2007. European flavours are so aromatic and flavourful. Paprika, veggies and mustard, with amazing dumplings and stewed meats. I was in heaven. This is a great side dish, for any home cooked meal. It is not fancy , but packed with flavour.
What you will need:
1 whole head of cauliflower
chicken or veggie stock
4 Tbsp of mayonnaise
2 Tbsp of dijon mustard, the grainier and stronger the better
A sprinkle of paprika, however you prefer the flavour
1 Tsp of lemon juice, and zest the lemon (add more if you like tart flavours)
2 Tbsp of fine chopped parsley
1 Dash of worchestershire sauce
salt and pepper
2 Tbsp of parmesan cheese
3 Tbsp of melted butter
Bring one pot of stock to a boil, enough to submerge the cauliflower.
Heat oven to 375 c
Cut all the green leafs of the head of cauliflower, and put in the pot, turn heat to medium.
Mix all ingredients together, and try and get the consistency of a thick paste.
Take cauliflower out of water after about 7 minutes, you want the veggie to be still al dente.
Put in a casserole dish, and spread th mixture over, then bake for 15 minutes.
Additional items to add to kick it up!
Green onions on top
Cheddar Cheese sprinkled over it
Dill added to the topping along with a honey mustard for a sweeter flavour
Chives finely chopped and added at the end
Herbs de Provence for a more french taste
Serve as a side dish along your meal ENJOY!
